SOURDOUGH EINKORN WAFFLES

Let's make these absolutely amazing waffles, made with my freshly milled einkorn flour and sourdough! Combining these two incredible ingredients, what can be better? Maybe that it's super easy to put together and it's the perfect way to start your day - with a healthy breakfast!
Another perk with this recipe is it's perfect for a freezer meal, you can whip up a big batch of these and once completely cooled place in a freezer bag to toast each morning for a crunchy yet soft waffle.
SOURDOUGH

The great thing about this recipe is either sourdough starter or discard can be used. It will add an extra layer of flavor to these waffles while adding all the benefits of sourdough to your breakfast meal.

The slight tang and the added sourdough to our wet ingredients will add depth of flavor and help with the fluffy texture of these waffles.

Einkorn
Einkorn flour, whether freshly milled or store bought, is one of my absolute favorite flours to use! It is such a tender grain, which yields such a soft and fluffy flour. Aas someone who mills her own flour from time to time, using hard or soft berries, red or white can yield a tougher, courser flour. Einkorn on the other hand, knowns as Natures Original Grain, creates a softer result and easier to work with.
The health benefits of Einkorn deserve its' own blog post, so I'll try not to get too much into that right now. Which may be a bit difficult to do, because if you know me, you know how much I love using this flour!
If you have any problems with typical store-bought flour some people tend to do better using Einkorn, however that is something you should discuss with your healthcare provider or nutritionist to see if that is an option for you!
My personal experience using einkorn has been ess bloating, easier digestion and more energy after using these, so with that it makes it the perfect choice for starting my day making these waffles (or pancakes or whatever breakfast you're making.)


1. In a bowl add in milk and butter cut into small pieces.
2. Place into microwave for a minute to two minutes for butter to melt.
3. Set aside to cool.
4. In a separate bowl add in all your dry ingredients; flour, baking powder, baking soda, spices, salt and sugar.
5. Mix well.
6. After milk has cooled to touch, add in your sourdough and stir until combined like a custard.
7. Preheat your waffle iron.
8. Add in eggs and whisk to combine.
9. Add wet to dry to combine.
10. For a larger waffle iron add in 1/2 cup, for mini waffles add 2 tablespoons. Add in inclusions at this point if any.
11. Cook waffles until fully cooked and browned well.
