Secret Ingredient

People have tried to guess what my "secret ingredient" is in these amazing biscuits and are actually surprised when they find out its not mayonnaise! I've shared shorts on making these biscuits and most of the guesses are, you got it- mayo! While mayo is an absolutely amazing ingredient in baking it isn't what makes these so amazing, it's VANILLA YOGURT! Yup! If you guessed yogurt, you were right! Now using vanilla yogurt doesn't add any extra flavor, but the texture is a game changer. It creates this super soft and fluffy biscuit! You can use any plain or vanilla yogurt for this recipe.
Vanilla Yogurt is an amazing and surprisingly adaptable ingredient to use in many recipes. While you may be thinking "vanilla" should be used in more sweet cakes and cupcake recipes, the slight vanilla flavor blends perfectly in these biscuits, while adding tenderness and moisture to them!
The delicate tangy flavor added when using vanilla yogurt, balances the saltiness and slight sweetness in this recipe, creating a more complex flavor profile.

Dry or Moist?

Many people complain about biscuits being dry, but here's the thing a biscuit should be right smack dab in the middle of dry and moist. It shouldn't be too dry, neither too moist. The perfect balance is met in this recipe, using the yogurt as the agent to create the moisture.

The acidity in the yogurt creates a very tender crumb, and when combined with the baking soda in this recipe it also assists in the rising process while keeping it rich yet tender.
Cutting in the butter, using the yogurt, and brushing liberally with butter after baking all helps to achieve a moist, delicious biscuit. After all, we're not trying to make cake, or a dinner roll! ​

Adding butter or jelly to the middle of your biscuit is a perfect way of enjoying your biscuit!

Sweet or Salty?
Salty or sweety? Why not both!
One thing I love about Popeyes biscuits, is its salty flavor, so be sure to add that salt in this recipe! I call for 1 teaspoon of salt in this recipe, but you can add up to 1 and 1/2 teaspoon for that extra salty flavor.
Popeyes biscuits are known for that salty, buttery flavor that tends to be more savory than sweet. Using a little sugar however balances the salty-sweet flavor profile which makes it prefect and versatile for using in many different ways as breakfast sandwiches, a side with some fried chicken or even slather jelly on top and have a quick snack!
Sweet goes perfectly with saltiness, which is why I add a dash (or a little more than a dash) of sugar.
Salty and sweet perfection!

1. In a large bowl, combine your flour, salt, baking powder, baking soda and sugar together well.

2. Cut your stick of butter into small pieces and using either your fingers or a pastry cutter, cut the butter into the flour creating small crumbs.
​
3. Add in your vanilla yogurt and mix with a spoon until it starts to come together.
​
4. Flour your surface and turn shaggy dough unto your counter and knead using the back of your wrist for just about one minute, until it becomes a smooth dough.

5. Flatten or roll out your dough about an inch in height. Dust with a little flour if needed. Using a cookie cutter or a cup about 3 inches in diameter cut dough into circles.

**It's important not to wiggle your dough when cutting. Go straight down until you reach the counter.

6. Bake at 400 for 20-25 minutes until golden brown on top.
7. Brush top liberally with butter.
8. Serve with butter or jelly in the center.
