Chicken Salad Sandwich

Equipment: Instant Pot Emergent Blender.

Creamy, chicken salad sandwiches, made with simple and fresh ingredients. Simple and delicious, quick and easy, velvety, smooth served with bread of choice or pate a choux pastry puffs. 

This Chicken Salad Sandwich is the epitome of deliciousness in a bite. 

Paired with some crispy, or toasted bread, garnished with bacon, lettuce tomatoes, my oh my is it divine!

 

Something so simple, which by the way, this is such a simple recipe made in the instant pot, can seriously be so mouthwatering good.

Another thing that makes this so simple, is the ingredients we will be using. It's just basic ingredients you probably already have on hand, and it's so quick to put together, while​using the Instant Pot in this recipe makes this even an easier process as well. 

 

One of the key things to point out in this recipe, is not only adults will love this recipe, but children will also think it's delicious.

My littles absolutely love this sandwich, and this filling can also be used in my chicken puff recipe using my choux dough pastry.

One reason why I think they like it so much, is there is no sharp bite of onion or celery in this recipe. Everything cooks down really well so all the flavor is uniformed.

There are countless variations of making a chicken salad, some include chopped onions and celery, some add nuts and cranberries, however in mine we are going the simple route. 

We will be using basic and simple ingredients, ones you probably already have on hand. Thats the great thing about making a chicken salad sandwich, is its' simplicity. 

Herbs and cooking the chicken down with fresh onions and garlic makes these sandwiches burst with flavor. 

These can also be used with canned chicken (skip the cooking process or toast chicken for a few minutes) or swap with canned tuna for a simple, delicious tuna salad.

IMMERSION BLENDER

There are several ways of making a chicken salad sandwich. Many people use a fork, their standing or hand mixer, or just use their hands, (one of the best tools in the kitchen), to shred chicken. All those are fine to use, however in my recipe, I want a very smooth and creamy consistency in my chicken. Hence, I pull my immersion blender for this job! 

An immersion blender is used to make purees, or blend things like soup or other ingredients. With its thin, long body, the blade is directly at the bottom, and you can pulse or do a continuous blend with it. 

When I use my immersion blender in this salad, I pulse all the way around, making sure every bit of chicken with some of the garlic and onions, along with the fresh herbs are well combined and blended together. 

Then I add my mayonnaise and mustard, and either mix that with a spoon or blend it all together as well creating a thick, luscious, smooth consistency. 

Now as much as I would recommend using an immersion blender to make this, because of the end result, if you don't have one you can just finely shred your chicken as best as you can in other way mentioned above.

CHICKEN SALAD RECIPE

Ingredients

1. Place chicken into instant pot insert.

​

2. Season with salt, pepper, poultry seasoning,

​

3. Add in sliced onion and whole cloves of garlic.

​

4. Add in water or chicken stock.

​

5. Set Instant Pot to seal and Pressure Cook for 30 minutes. 

​

6. Let pressure naturally release after cooking is completed. Simple either leave it alone to release, or you can manually release it by changing the vent from sealing to vent. Be careful because there will be hot steam quickly escaping if you choose to manually release.  

​

7. Carefully, in a heat safe bowl, drain half of the liquid, leaving about 1/4 cup amount with the chicken. 

​

8.Add in your mustard, mayonnaise, chopped cilantro. (Adding cilantro/culantro at the end lends more flavor. You can also add while cooking chicken, but it will lose some flavor.)

​

9. Using your emergent blender carefully blend until the chicken is nice and smooth and all the ingredients are thoroughly incorporated, including the cloves of garlic and onion slices. 

​

10. Serve on some delicious bread with toppings such as lettuce, tomatoes, bacon, jalapenos or hot sauce.
