
Breakfast. The most important meal of the day they say. When you have littles, there are times when you want to have simple and easy breakfast to start day.
Sometimes that may look like a bowl of cereal, sometimes a quick toast or bagel. Sometimes, it's a quick pancake recipe thrown together in a few minutes.
This recipe is one that takes a few ingredients and a few minutes.
If you are like me with bananas that are over ripe because everyone loved bananas last week, but this week they don't like them then this is a great way to use up any of those.
You can also use frozen bananas you've had or regular ripe bananas. Just whatever bananas you have on hand will work.

These are delicious with the blend of spices added to the dry ingredients as well as they are a nice soft fluffy addition to your morning routine.

SPICES
Pancakes or waffles? You guys can debate about that while I go ahead and talk about these pancakes really quickly.
There are a lot of banana pancake recipes out there, and I'm sure all are delicious. However, if I see a banana pancake recipe without spices, then I know it's probably not going to work for me. Without the addition of the spices to these, I'm not sure how enjoyable they would be. The flavors that the spices add are just the right balance with the banana and hints of vanilla.
Bananas add the sweet element to these pancakes, while the spices add the warm, earthy contrast.
Cinnamon, nutmeg and all spice can be known as sweet spices since they are typically added to many desserts. However, they are also the warm spices very nostalgic to the cooler months and used in many desserts and drinks around the fall and winter months.
Adding spices to the pancakes are what makes these a delicious pancake, adding flavor, warmth, and making this breakfast more comforting.

Key Ingredients:
Overripe Bananas: While you don't always need to use overripe bananas, it is a key ingredient and the sweeter the better. The more spots a banana has on it, the sweeter it's going to be. The riper a banana is, the softer it is making it easier to mash which helps in creating in a smoother consistency in the batter.

Spices: As mentioned about spices are what makes these stand out from a regular plain banana flavored pancake. Cinnamon, nutmeg and all spice are what I use, you can add a dash of cloves or cardamon if you'd like as well!

Flour: Now, of course you need some sort of flour to create a pancake. In this recipe I use all-purpose flour, but you can substitute for other types of flour as well. The texture may be a bit different, but the great thing of making your own food is playing around with ingredients to see which works for you! Freshly milled flour, oat, cassava or almond are just a few that you can use. Again, texture will vary especially if using a course flour.

.1. Wam milk and butter until butter is melted.

2. Mash bananas finely and add to milk and butter.
​
3. When cooled, add in one large egg.
4Add vanilla extract.
​
5. In a separate bowl, combine flour, baking powder, sugar, spices. and salt.
6 Combine dry to wet and gently incorporate.
7. On medium heat on a skillet or griddle brush butter (optional) and add in quarter cup to a half cup of batter at a time.
8. Wait until bubbles form around the top, then flip and cook next side for an additional 30 seconds or so until fully cooked through.

9. Serve with butter on top and syrup of your choice.
